What can you do in that time? Is it long? My ex girlfriend who was a primary school teacher got paid for the holiday but marked exams for extra money or worked at the stables where she kept her horse.

It's basically like not working or getting paid for three months out of the year. American teachers don't get paid a lot to begin with, so many of them do find stuff to do over the summer. Some get summer jobs just like their students. Some have a spouse working a steady job and just budget for the break within the family.
