I live 15 minutes from border of Mexico. I need to make a trip because even though a sweet gal running a fish taco store, showed me how to make the real deal Chile Rojo (mine is still not as good as her's) and YES I know you said you are going to use Salsa Verde which I usually use for Fish dishes - One or the Other makes for a spicy and HEALTHY way to go. Hope you bought low fat ground beef. In Mexico they use super lean meats and of course usually not ground but point is LEAN LEAN cause Lean is Cheep n turns out Lean is Healthy.

I do a Pork Green Chile Stew. Idea came from some cooking show years ago and I did that dish but it needed more more.
Brown chunks of pork
Add lots of Water
Load it up with Pablanos Green Chiles 100% of minus only the stem but keep all the insides seeds and all.
Add some Jalapenos over time checking for heat level you desire
Load it up with Tomatillo's in quarter chunks. They add a sour taste so amount depends on personal tastes and they add Thickness to the Stew
Towards last 25 minutes add Potato chunks cause you don't want mushy Pertatoes.
And add some Chicken Stock to taste. One can get away with just the Pork flavor BUT Chicken Stock adds a huge dimension to the final results.
Takes maybe 3 hours to cook down with Pertatoes that last 25 min or so and eat with Flour Tortillas or Corn.
I tried Onions in this dish and they add a bit of sweetness this stew did not need and I do use Onions a bunch in all other stews I cook up.
Cilantro of course always works, I have yet to try my Stew with Cilantro.
Tooth ache and may be the first cavity in Years or I would be out for a Bowl of Menudo.
Limes not needed re the Tomatillo's but limes could sub for if one cannot find them.
